Arabic Chicken Kabsa Rice

Chicken Kabsa rice is an exotic Saudi rice dish served with raisins and almonds. Kabsa is a rice dish that is featuring Arabian style flavorful rice and grilled chicken.


Ingredients

(serves 4)

2 1⁄4 cups basmati rice
1⁄4 cup olive oil/ melted butter
1.5 kg chicken, cut into 8-10 pieces
1 large onion, finely chopped
1 tbsp Ginger and garlic paste
4  Green chili whole
1⁄4 cup tomato puree
3 fresh tomatoes
medium carrot-grated
Bay leaf
2 whole cloves
1 stick cinnamon
1 Star anise
5 cardomons
1 nutmeg
1 tsp cumin powder
11/2 teaspoons coriander powder
1 teaspoon chili powder
1 teaspoon pepper powder
1/2 teaspoon garam masala
salt to taste
4 cups hot water
1 chicken stock cube
1⁄4 cup roasted cashews

Directions


Heat olive oil in a heavy bottom pan, add cardamom, cinnamon, cloves ,bay leaf,star anise and whole black pepper to it. Add chopped onion, green chili, ginger garlic paste and enough salt and saute till golden colour. Then add chicken stock cube.
Add all the spice powders and to this and saute till raw smell disappear and oil appears on top. Add the tomato puree to this and bring to boil. When it becomes thick, add the chicken pieces and cook on high heat stirring occasionally, for about 4 – 5 minutes. Add 3 cup of water to this and bring to boil, reduce the flame to medium and cook it covered till chicken is cooked completely. Remove the chicken pieces from it. Spread on a foiled tray and bake it on 350 f for 20 minutes or golden color. Keep it aside. Add 2 – 2 ½ cup of water to the gravy in which chicken is cooked and bring to boil on high flame. Add the rice .Add more salt if required. Reduce the flame and cook till done.Add grated carrots . Add the baked chicken pieces. Garnish with cashews and boiled eggs...Serve hot with any desired side dish.
