Nasi Goreng

Nasi goreng, also means "fried rice" in Indonesian, is an Indonesian rice dish with pieces of chicken, prawns and vegetables added.


Ingredients


500g basmati rice(can use any rice)
300g chicken (breast parts diced)
250g prawns
6 dried chillies
200g spring onions
50g carrots (chopped)
2 eggs
1tbsp shrimp paste*
1tbsp soya sauce
1tbsp oyster sauce
1tbsp chillie paste
1tbsp ginger garlic paste
Salt and pepper to taste
4 to 5 tbsp vegetable oil

Method

  1. Marinate all the meats with salt,pepper and soya sauce at least 2 hours. 
  2. Heat oil and add ginger garlic paste and the dried chillies saute well. 
  3. Then add the shrimp paste. After that add all the meats and stir fry until it's cooked. 
  4. Add the spring onions, carrots, chillie paste, soya sauce and oyster sauce-mix well. 
  5. Increase the heat to high and add the slightly beaten eggs 
  6. Finally add the cooked rice and salt and pepper to taste. Stir fry for few minutes and switch off the flame.
  7. Serve hot with a fried egg, vegetable chopsuey and salad. 

Notes:
  • Shrimp paste can be made at home by dry roasting dried shrimps and grinding them into a fine powder. This can be stored up to two weeks in an air tight container.
