Egg Roti
This is a delicious Sri Lankan Street Food. Egg roti is a flat bread stuffed with an egg.
Ingredients
4 cups all purpose flour
1 tbsp vegetable oil/ sunflower oil
1/2 cup vegetable oil
a pinch of bicarbonate soda
1/4 tsp salt or per taste
1/2 cup warm water (this is approximate, adjust accordingly)
2 large eggs slightly beaten with salt and pepper

Directions
- Put all the ingredients in a bowl and knead well for about 10 minutes or until you get a soft and smooth dough.
- Make small balls and pour 1/2 cup vegetable oil over the balls made. Keep it covered with a cling film / wet cloth to avoid drying. Let it sit for 2 hours. (Do not keep long)
- Heat a tawa or flat pancake pan to high heat.
- After two hours, roll our each dough and put the slightly beaten egg mixture to the centre and fold it as shown in the picture below. Put a little oil to the hot pan and cook the egg roti turning both sides. Serve hot! Enjoy
