Malacca Fried Rice

An authentic fried rice extremely popular in Malacca, Malaysia. Prawn are great addition to this dish which makes it very delicious. 



Ingredients


500g cooked basmati rice (can use any rice)
300g chicken (breast parts cubed)
250g prawns
5 spring onions, chopped
Chopped spring onion leaves of 5 spring onions
100g frozen green peas
2 eggs
3 tbsp tomato sauce
3 tbsp soy sauce
1tbsp ginger garlic paste
Salt and pepper to taste
4 to 5 tbsp vegetable oil


Directions


  1. Season the the diced chicken and cleaned prawns with salt, pepper and 1 tsp soy sauce, at least 4 hours or overnight is best.
  2. Cook the rice with salt as per taste and let it cool completely. 
  3. Soak green peas in hot water for 10 minutes. Then drain. 
  4. Heat a pan and fry the slightly beaten eggs with salt and pepper. (it should be like an omelet) Cut into small squares and keep it aside.
  5. Heat oil and add ginger garlic paste and all the meat and stir fry over medium high heat until all the meat are cooked.
  6. Next add tomato sauce, soy sauce and chopped spring onions and stir well for about two minutes.
  7. Then add the cooked rice and increase the heat to high and stir fry the rice.
  8. Finally add the green peas, fried egg pieces, spring onions, salt and pepper as per taste and mix well. Switch off flame and serve hot! Enjoy!
