Marshmallows
Marshmallows are sugar-based confectionery that is made of sugar, water and gelatin whipped to a squishy consistency, molded and cut into pieces and coated with corn starch.
Ingredients
2 tbsp gelatin
1/2 cup hot water
250g Sugar
1/2 cup cold water
1/4 tsp vanilla
1 cup corn flour/ corn starch
1/4 powdered sugar/icing sugar
Directions
1. Dissolve 2 tablespoons of gelatin with 1/2 cup of hot water and let it sit.
2. Add 250g of sugar and 1/2 cup water to a heavy bottomed pan and dissolve it. Keep boiling until the syrup is very thick and then add the gelatin mixture.
3. Keep boiling until you reach thread consistency. (Thread consistency means when you touch the syrup and move your thumb and the forefinger apart the it will be like thread)
4. Once the thread consistency is reached, take the pan off flame and let it cool (not completely cool).
5. Now add the vanilla extract and beat the syrup in high speed until you thick and glossy.
6. At first the marshmallows will look clear. But after 5 minutes of beating you can see the marshmallows are increasing in volume.
7. Once the marshmallows mixture is forming a rope like mixture decrease the speed to medium speed. Beat for about 8-10 minutes continuously.
8. Using a spatula, transfer the sticky marshmallow mixture into the buttered pan. Let it sit for 4 hours or overnight until it sets in room temperature.
9. Combine 1 cup corn flour and 1/4 cup powdered sugar to sprinkle when cutting the marshmallows.
10. Cut the marshmallow into desired sizes and coat with corn flour and powdered sugar together. Enjoy!!!
