Moist Chocolate Cake
This mouthwatering, super moist chocolate cake, is a homemade chocolate cake topped with chocolate butter cream frosting . Moist, chocolaty perfection. This is the chocolate cake you've been dreaming of!
Ingredients
*All the ingredients should be in room temperature
For the cake
210g All purpose flour
400g Sugar
85g Cocoa powder
2 large Eggs
1/2 cup Vegetable oil
1 cup buttermilk*
1 cup hot coffee*
1 1/2 tsp baking powder
1 tsp bicarbonate soda
1 tsp vanilla
1/2 tsp salt
For the filling
100g butter
50g vegetable shortening
2 tbsp condensed milk
1 tsp vanilla
500g icing sugar/ confectioners sugar(sifted)
Directions
1. Preheat the oven to 180 degrees Celsius for 10 minutes.
2. Prepare two 8 inch round pans or 20cm square pans. Butter the pans and line them with parchment paper.
3. Sift flour, cocoa powder, baking powdee, baking soda and salt in to a bowl. Then add the sugar.
4. In another bowl or jug, combine oil, eggs, vanilla and buttermilk. Whisk slightly for three seconds and add this mixture to the flour mixture.
5. Using an electric beater, beat this for one minute in a medium speed until it combines. (Do not overbeat)
6. Now add the hot coffee to and mix it well using a spatula or a wooden spoon.
7. Pour the batter into the prepared trays or pans.
8. Bake under 180 degrees Celsius for 40 to 45 minutes or until the tooth pick comes out clean.
9. Once baked let it sit for 5 minutes and then transfer it to wire racks to cool completely.
10. Prepare the filling until it cools.
11. Beat the butter and vegetable shortening well and then beat with condensed milk and vanilla. Add the sifted confectioners sugar in three additions and beat well for a creamy texture.
12. Sandwich the cakes and apply the buttercream filling in between.
13. Finally pour chocolate ganache on top. (Refer our chocolate ganache recipe)
14. Let the cake sit in room temperature for a day for best results. Refregerate after two days. (If you are living in a hot climate, it is better to refregerate it after a day)
15. Serve in room temperature for a better taste. Enjoy!!
Tips:
• If you don't find buttermilk in your area, you can make buttermilk by adding 1 tsp lemon juice or 1 tsp white vinger to 1 cup of full fat milk.
• To make the coffee add 1 tsp instant coffee to 1 cup hot water. You may adjust this to your preference.
• Make the cake a day before you want it to be served for better taste.
