Tres Leches
A tres leches cake also known as three milk cake, is a cake soaked in three kinds of milk topped with cream.
Ingredients
200g all purpose flour1 1/2 tspn baking powder
1/4 teaspoon salt
200g granulated white sugar
2 large eggs, (room temperature)
1 tsp vanilla
80 ml full fat milk (room temperature)
80 ml light extra virgin olive oil (can also use vegetable, corn, canola, or sunflower oil)
For the soaking:
1 cup condensed milk
1 cup evaporated milk
1 cup whole milk/ heavy cream
Directions
- Preheat your oven to 180 degrees Celsius.
- Butter, or spray with a non-stick vegetable spray, cake pans or the dish.
- In a bowl, sift the flour with the baking powder and salt.
- In the bowl, beat the sugar, eggs, and vanilla extract until smooth and creamy (about 1 minute).
- Then on low speed, add the flour mixture (in three additions) with the milk and oil (in two additions), beginning and ending with the flour mixture.
- Pour the batter on to the prepared pans, smoothing the tops with the back of a spoon or a spatula.
- Bake about 25 to 30 minutes or until a toothpick comes out clean.
- Place the cakes on a wire rack to cool, and let it cool completely
- After it is cool, Pierce the cake several times with a fork.
- Combine the heavy cream/whole milk, condensed milk, and evaporated milk together. Pour over the top of the cooled cake.
- Whip whipping cream, with 1 cup of sugar, and the 1 teaspoon vanilla together until thick. Spread over the top of cake. Be sure to the keep the cake refrigerated. Enjoy!!!
