Tres Leches

A tres leches cake also known as three milk cake, is a cake soaked in three kinds of milk topped with cream.



Ingredients

200g all purpose flour
1 1/2 tspn baking powder
1/4 teaspoon salt
200g granulated white sugar
2 large eggs, (room temperature)
1 tsp vanilla
80 ml full fat milk (room temperature)
80 ml light extra virgin olive oil (can also use vegetable, corn, canola, or sunflower oil)

For the soaking:
1 cup condensed milk
1 cup evaporated milk
1 cup whole milk/ heavy cream






Directions

  1. Preheat your oven to 180 degrees Celsius.
  2. Butter, or spray with a non-stick vegetable spray, cake pans or the dish.
  3. In a bowl, sift the flour with the baking powder and salt.
  4. In the bowl, beat the sugar, eggs, and vanilla extract until smooth and creamy (about 1 minute).
  5. Then on low speed, add the flour mixture (in three additions) with the milk and oil (in two additions), beginning and ending with the flour mixture.
  6. Pour the batter on to the prepared pans, smoothing the tops with the back of a spoon or a spatula.
  7. Bake about 25 to 30 minutes or until a toothpick comes out clean.
  8. Place the cakes on a wire rack to cool, and let it cool completely
  9. After it is cool, Pierce the cake several times with a fork.
  10. Combine the heavy cream/whole milk, condensed milk, and evaporated milk together. Pour over the top of the cooled cake.
  11. Whip whipping cream, with 1 cup of sugar, and the 1 teaspoon vanilla together until thick. Spread over the top of cake. Be sure to the keep the cake refrigerated. Enjoy!!!
