Fudgy Brownies

This easy homemade brownie recipe is simply the best! These rich, fudgy brownies are thick and fudgy in the centre and loaded with chocolate and cashew nuts without losing crispy, crackly tops! These homemade brownies will have you ditch those box brownies forever!





Ingredients

125g melted semi-sweet cooking chocolate (double boil)
100g cooking chocolate chopped into chunks / chocolate chips
125g melted butter (salted)
2 large eggs
125g granulated brown sugar
90g flour
30g cocoa powder
1 tsp baking powder 
1 tsp vanilla extract
50g chopped cashews (optional)



Directions


  1. Preheat oven to 180 degrees Celsius and prepare a 11 × 6 inch pan or 8 x 8 square pan and line it with parchment paper.
  2. In medium size bowl, mix the melted butter and brown sugar with a hand mixer. (Do not use electric mixer) Make sure the sugar is not completely dissolved.
  3. Then add the eggs and vanilla and whisk or beat with the hand mixer until the batter has become smooth and light in colour.
  4. Next add in the melted chocolate and mix well (make sure the chocolate is not too hot).
  5. Sift flour, baking powder and cocoa powder together and fold it into the chocolate batter using a rubber spatula. (Be careful not to over mix)
  6. Finally fold in the chocolate chunks and chopped cashew nuts and transfer it to the prepared tray. Distribute the batter evenly. 
  7. Bake for 25-30 minutes. Let it cool completely before slice. Enjoy!



Tips:
  • Do not use electric beater to whisk. Always use a hand whisker to beat the batter.
  • Don't over mix the batter. Over mixing will make your brownies to be like cake. 
  • You can garnish your brownies with our Chocolate Ganache recipe and top with topping such as chopped cashews, sprinkles, strawberries, caramel etc.
