Lamprais ( lomprijst)
Lamprais is a Dutch Burgher-influenced dish, that is very popular in Sri Lanka. Lamprais is derived from the Dutch word lomprijst. It is a packet of specific set of rice and curry that is wrapped up with banana leaf and freshly baked to infuse the banana aroma into the rice. Nothing beats a Lamprais straight out of the oven.

Deep fried Ash plantains

Banana leaves to wrap
Directions
- Cook and prepare all the curries mentioned above. Then assemble. (click each curry for the recipe link)
- Wash banana leaves and wipe them. Use scissors to cut banana leaves into the size you need to wrap a food parcel.
- Steam or heat* banana leaves to make them pliable. Wipe if there is any moisture. (See notes)
- Place enough rice and curry for one serving in the center of the leaf, then fold like a handkerchief to make a square packet. (See step by step pictures)
- Bake the parcels in a preheated oven under 200 degrees Celsius for 25-30 minutes. Serve hot right from the oven. Enjoy!
Notes:
- Banana leaves can be heated by keeping them on direct flame to make them pliable. Do this carefully, do not let it burn.
- Boil eggs and deep fry them in hot oil.
- In the same oil deep fry the ash plantains by mixing 1/4 salt and 1/4 tsp turmeric powder.
- You can make the fish cutlets a day before and refrigerate them without frying.
- If your banana leaves are breaking, wrap it up again with aluminium foil and bake them.
