Molten chocolate lava cake
Molten Chocolate Lava Cakes are such a delicious, classic, moist and so chocolaty desert cakes with oozing molten centers. These lava cakes are incredibly easy to make and ready in less than 30 minutes with just 6 ingredients!!!
(make 2 lava cakes)
2 tbsp flour
4 tbsp butter
2 tbsp sugar
1/2 tsp vanilla extract
2 medium sized eggs (room temperature)
For garnish
Raspberries
mint leaves
Icing sugar/ confectioners sugar (optional)

Ingredients
75g cooking chocolate (semi-sweet)2 tbsp flour
4 tbsp butter
2 tbsp sugar
1/2 tsp vanilla extract
2 medium sized eggs (room temperature)

Directions
- Preheat oven to 200 degrees Celsius for 10 minutes.
- Grease two ramekins or any coffee mugs of same size with butter. (I used 8.8 cm diameter ramekins)*
- Grate or chop the cooking chocolate and double boil it with butter and keep stirring unitl the chocolate melts with butter.
- Then take off from the double boiler and add the sugar and vanilla while stirring. Let it cool for 10 minutes.
- Add the slightly beaten eggs little at at time to the chocolate mixture while beating in a very low speed using an electric beater or mixer. Beat or whisk for around 30-40 seconds or until you form a thick batter. (Do not beat longer)
- Next add the flour and mix well using a spatula until combined. Your batter should be smooth like cake batter.
- Pour 3/4 of the batter into the prepared ramekins or coffee mugs and bake for 10 minutes.*
- Once baked you will see the center is very soft but it appears to be baked like a normal cake.
- Let the cakes baked, sit for 2 minutes in the ramkens itself before you flip.
- After 2 minutes flip them slowly and very carefully into serving plates and garnish with raspberries or a scoop of vanilla ice cream. Your lava cakes are ready! Enjoy!
Tips:
- It is best to use oven proof porcelain ramekins or coffee mugs for lava cakes. Aluminium foil cups works fine.
- Grease you ramekins or coffee mugs well to make it easier to remove the lava cakes.
- If the lava cake is not removing, use a thin knife to loosen the edges and try removing them. You can also serve with the ramekins itself without flipping.

The above recipe is only for two lava cakes. Given below is the recipe for 4 lava cakes.

- 1/4 cup butter (55g)
- 1/4 cup sugar (52g)
