Vanilla cupcakes with cream cheese frosting

Perfectly light and fluffy cupcakes with cream cheese frosting is a perfect match for those who love cheese flavour in cupcakes. 


Ingredients


For the cupcakes

200g all purpose flour

200g white sugar
2 large eggs, (room temperature)
1 1/2 tspn baking powder
1/4 teaspoon salt
1 tsp vanilla
80 ml full fat milk (room temperature)
80 ml light extra virgin olive oil (can also use vegetable or sunflower oil)


For the frosting

100g cream cheese (softened)
50g salted butter (softened)
1/4 tsp vanilla
300g confectioners sugar / icing sugar

Directions

  1. Preheat your oven to 180 degrees Celcius.
  2. Butter, or spray a muffin pan or cupcake pan. 
  3. In a bowl, sift the flour with the baking powder and salt.
  4. In the bowl, beat the sugar, eggs, and vanilla extract until smooth and creamy (about 2 minutes).
  5. Then on low speed, add the flour mixture (in three additions) with the milk and oil (in two additions), beginning and ending with the flour mixture.
  6. Pour the batter on to the prepared muffin pans, smoothing the tops with the back of a spoon or a spatula.
  7. Bake about 25 to 30 minutes or until a toothpick comes out clean.
  8. Place the cupcakes on a wire rack to cool, and let it cool completely
  9. Prepare the cream cheese frosting by beating softened cream cheese with butter and gradually add icing sugar and vanilla. Beat well with an electric beater until creamy.
  10. Frost the cupcakes with the cream cheese frosting using a piping bag. Enjoy!
