Crispy Fried Chicken Tenders

Craving for those Fried Chicken tenders in fast food restaurants? Give this easy recipe a try and make them at home! My Super Crispy Fried Chicken Recipe is crispy, juicy and heavenly. The batter never falls off the chicken so each bite is so crispy. This recipe does not call for many ingredients and is made from scratch. 





Ingredients

For the marinate

600g chicken boneless chicken (thigh parts are best)
2 cups fresh milk 
2 tbsp lemon juice
2 tsp salt
1 tsp pepper powder
1 tsp red chili powder

For the coating

2 cups all purpose flour
1/8 tsp baking powder
1/2 tsp red chili powder
1 tbsp Tandoori Chicken Masala powder*
1 tsp salt
1/2 tsp thyme (optional)
1/2 tsp oregano (optional)
1/2 tsp dried parsley (optional)
3 eggs slightly beaten
Sunflower oil for deep frying


Directions
  1. In a medium sized bowl, mix milk with lemon juice and let it sit for 10 minutes. Then add the rest of the marinating ingredients. 
  2. Wash the chicken and wipe with a clean kitchen towel to remove excess moisture. Cut in to desired sizes.  
  3. Hammer the chicken pieces to make it flatten and even. (This step is optional)
  4. Then put the chicken pieces in to the milk mixture and cover it with plastic wrap. 
  5. Refrigerate the chicken at least 4 hours or overnight is best. 
  6. In a heavy bottomed ball, prepare the flour coating by mixing flour, baking powder, Tandoori Masala, salt and dried herbs. 
  7. Slightly beat the eggs in a bowl. 
  8. Now take a piece of chicken from the milk and put it directly in to the flour mixture and coat well. 
  9. Then dip it into the beaten egg mixture. Put it back to the flour mixture again and coat well.
  10. Repeat the coating by dipping it in the eggs and then coat again in the flour mixture. (the chicken should be coated twice)
  11. Place the chicken in a tray or plate. 
  12. Repeat the same with all the chicken pieces.
  13. Heat oil in a pan over medium heat and when the oil is hot, deep fry the coated chicken pieces for about 5-7 minutes or until golden colour. 
  14. Drain the chicken and transfer in to serving dish lined with paper towels. Serve hot! Enjoy!

Notes:
  • The reason for using Tandoori chicken Masala powder is, all the ingredients required such as garlic powder, paprika powder, ginger powder, cumin powder etc are available in the Masala powder. It is very easy to use Tandoori chicken Masala powder into this.
