French crepes

On my visit to Paris, I saw an enormous number of street vendors offering a large and thin type of pancake or a crepe. These stands were there everywhere we went. Even in front of the most famous monuments, in the gardens and parks as well as on the tiniest streets. Actually, you can’t visit Paris without trying crepes. These crepes are cooked for about one minute, after which it is usually rolled with some sweet filling before being served. This inspired me to try these at home. 




(Servings : 2 large crepes)

Ingredients


1 cup all purpose flour
2 eggs
1 tsp sunflower/vegetable oil
1 tbsp sugar
1 tsp vanilla extract 
1/4 tsp salt
1 1/2 cups milk


Directions


  1. In a bowl combine all the dry ingredients. Make a well in the centre and add all the wet ingredients. Blend using a blender until a smooth quite runny batter is formed with no lumps. (This blending should take only few seconds)
  2. Set the batter for 10 minutes. Heat a lightly buttered skillet or crepe pan over medium to high heat. 
  3. Pour the batter to the pan and cook over medium heat for less than a minute. Proceed the same for the rest of the batter.
  4. Stack the crepes onto a plate, and serve with your favorite sweet topping or filling. This can be served with a savoury filling or topping too. (I used chopped strawberry, whipped cream, chocolate and banana) Enjoy!
