Kiribath (Sri Lankan Milk rice or Rice Cake)
Milk Rice or Kiribath is a popular Sri Lankan food that is enjoyed for breakfast & symbolizes good luck & prosperity. It is traditional Sri Lankan dish made from rice. It is prepared by cooking rice with coconut milk, hence this name, and can be considered a form of rice cake.
Ingredients
1 cup rice
2 1/4 cups water
1 cup thick coconut milk
Salt to taste
Directions
1. Wash and drain the rice.
2. Cook the rice with water and 1/2 tsp salt in a high to medium heat.
3. Dissolve 1/2 tsp salt with the thick coconut milk.
4. When the rice is cooked (there shouldn't be any water), pour the thick coconut milk, stirring continuously in high heat.
5. Stir well until the rice becomes a thick paste.
6. Once it has reached to the right consistency, transfer it into a plate or any mould. Let it set for 10 minutes. Cut into diamond shapes and serve with Katta Sambol.
