Sri Lankan Coconut Roti (Pol Roti)
Sri lankan Coconut Roti or Pol Roti, a flat bread made up of flour, freshly grated coconut with finely chopped green chillies and onions for extra texture. This is a delicious roti from the little island Srilanka, served with side dishes such as Katta sambal (Chili sambol) and Pol Sambol (coconut sambol). This is how I make my Pol Roti.
Ingredients
2 cups all purpose flour
1 cup freshly grated coconut
salt as per taste
1 green chili (chopped)
1 small onion (chopped)
a pinch of baking soda
1/4 tsp sugar
Warm water to knead
Directions
- In a bowl, put all the ingredients and add little water at a time to knead it into a soft dough.
- Make balls out of them and roll them into small circles. (use coconut oil if the dough is sticky)
- Heat a skillet or pan over medium high heat and cook the rotis until both sides become brown.
- Serve hot. Enjoy!
