Banana Pillows (Sri Lankan Style)
Banana Pillows are perfect for when you need to satisfy a quick sweet craving. Sweet and delicious. Yummy to the very last bite. These banana pillows are deep fried and made of a portion of batter filled with overripe banana. These are often served with any sugar syrup, treacle, maple syrup or sprinkled powdered sugar. I usually like it sprinkled with powdered sugar and a dash of caramel syrup.
Ingredients
3 large overripe bananas (approx 300g)
1 1/2 Cup all purpose flour (approx 200g)
2 tbsp white sugar
1 tsp baking powder
1 cup water
1/4 tsp salt
1/2 tsp vanilla extract (optional)
Vegetable oil for deep frying

Directions
- In a bowl, Mash the bananas using a fork.
- Add the flour, baking powder, vanilla and salt. Mix well until a smooth batter is formed. The batter should be a quite runny batter.
- Let the batter rest for 10 minutes. Meanwhile heat oil in a pan.
- When the oil is hot, scoop an amount of batter into the oil.
- Splash oil on to the surface and keep flipping them to fry them evenly over medium heat. (Make sure to fry them in medium heat)
- Once they are golden in colour, drain oil and transfer them to paper towel.
- While it is hot coat with any sugar syrup, treacle, maple syrup or sprinkle powdered sugar.
- Serve hot! Enjoy!
