Cinnamon Rolls

Imagine waking up to fresh cinnamon rolls with a hot cup of coffee. These fluffy, delicious cinnamon rolls with cream cheese frosting is made the night before and baked in the morning. They are better than those store bought. This recipe will also save your time in the morning for breakfast. 



(serves 8)


Ingredients

For the dough 

4 cups all purpose flour
1 cup warm milk 
1 tbsp instant yeast
2 tbsp white sugar
2 tbsp salted butter
2 tbsp vegetable oil
1 large egg
1/2 tsp salt


For the filling

3-4 tbsp of cinnamon powder
1/4 cup brown sugar
1/2 cup salted melted butter 

For the topping

1/2 cup cream cheese (softened)
1/4 cup salted butter (softened)
1 1/2 - 2 cups icing sugar/ powdered sugar
1 tsp vanilla
2 tbsp milk




Directions

  1. In a bowl, combine warm milk, yeast, butter, olive oil, eggs, sugar and salt. 
  2. Now add in the flour in two additions while mixing with a spoon. Once everything is combined, knead well to form a very soft dough. (It will be quite sticky in the begining, but once you knead it wont stick. The dough should leave the mixing bowl.)
  3. Apply oil on the dough ball and cover and let it rise for at least 2 hours or until it doubles in size. 
  4. After the dough has double in size, give a punch and roll it out on to a slightly floured surface. Roll to form a rectangle in shape. 
  5. Apply melted butter on the rectangle. Make sure to apply to everywhere evenly. 
  6. Combine the brown sugar and the cinnamon together. Sprinkle on top of the melted butter. 
  7. Now roll up tightly and pinch to seal the end. 
  8. Cut the roll using a sharp knife in to 12 equal pieces and place the slices on to a greased tray. (use a 9 x 13 inch tray, apply melted butter to grease the tray)

  9. Once all the slices are placed, cover with plastic wrap and refrigerate it overnight to rise slowly. (You can also let it rise in room temperature for about 2 hours but I prefer overnight rise.)
  10. Preheat oven to 180 degrees Celsius. Bake the rolls for 30 minutes. Meanwhile prepare the cream cheese frosting by mixing everything together with a hand whisker. (No need of electric beater)
  11. As soon as it is baked, apply some melted butter on top and cover it using foil or a cloth for about 10 minutes. 
  12. After 10 minutes pour the cream cheese frosting on top of the hot rolls. Let it sit for few minutes and then serve hot! They are really nice to eat when they are hot! Enjoy!

Notes:

  • You can refrigerate this up to 4 days wrapped with plastic wrap. When you want to eat, you can microwave them.
