Potato Milk Curry

Potatoes in a creamy gravy of Coconut milk, a Sri Lankan dish that is a great with any Sri Lankan rice dish. This is one of the easy Potato curry recipes from Sri Lanka.  Though there are many variations of making this potato curry, this is my way of making this curry. 




Ingredients

200g potatoes (cut into halves)
1 onion (thinly sliced)
1 green chili 
1 cup coconut milk
1 small tomato (chopped)
3 garlic cloves (sliced)
 2 whole dried red chili
1 tsp mustard seeds
1/4 tsp fenugreek seeds
1/4 tsp turmeric powder
1/4 tsp red chili powder (optional)
1 tbsp oil 




Directions

  1. In a saucepan, add the coconut milk, green chili, chopped tomato, garlic and the potatoes. Cook in a medium heat until the potatoes are cooked. 
  2. Heat oil in a pan over medium to high heat. When the oil is hot, add the mustard seeds, fenureek seeds, sliced onions and red dry chilies. Stir fry until the onions turn gold colour. 
  3. When the onions are golden in colour, transfer the everything into the boiled potato mixture. Let the potato curry come to a boil once the onions are added. The potato milk curry is ready. Enjoy!
