Sri Lankan Butter Cake

When it comes to cakes in Sri Lanka, Butter cake is the most popular cake. Butter cake is a Sri Lankan dessert and tea time staple. Scones for the English and butter cake for the Sri Lankans. We all love a good butter cake. It very simple and easy to make. This is the best butter cake recipe you will ever find. 




Ingredients

250g salted butter (softened) 
225g sugar
5 eggs 
225g flour 
2 tsp baking powder
3 tsp vanilla esse4nce
1/4 cup milk (or 2 tbsp milk powder+3 tbsp cold water)


Directions

  1. Preheat your oven to 150 degrees Celsius for 10 minutes.
  2. Sift flour+baking powder together twice. 
  3. Beat butter and sugar well until creamy. 
  4. Add one egg at a time and beat well until creamy.
  5. Then add the flour and fold with a spatula until combined.( Do not beat)
  6. Finally add the vanilla extract to the milk and mix it with the cake batter. Mix well with a spatula until combined. (do not beat )
  7. Pour the batter to a lined baking pan and bake for 1 hour under 150 degree Celsius.
