Gnanakatha (Sri Lankan Sugar cookies)
Gnanakatha is a classic Sri Lankan sugar cookie. It is similar to crinkle cookies. They are very easy to make and a great addition to afternoon tea.

Ingredients
50g butter
250g all purpose Flour
2 tsp baking powder
120g white sugar plus extra for garnish
1 egg
1tsp vanilla essence
a pinch of salt
Directions
- Preheat the oven to 180 degrees Celsius.
- In a bowl, beat butter and sugar well. Then add the egg and vanilla essence and beat well again.
- Make lime sized balls and dip it half in water and then coat with sugar.
- Press the dough ball gently to make them slightly flatten when you coat the sugar.
- Bake the cookies for 20-30 minutes. Enjoy!
