Gnanakatha (Sri Lankan Sugar cookies)

Gnanakatha is a classic Sri Lankan sugar cookie. It is similar to crinkle cookies. They are very easy to make and a great addition to afternoon tea.


(makes 12)

Ingredients


50g butter
250g all purpose Flour
2 tsp baking powder
120g white sugar plus extra for garnish
1 egg
1tsp vanilla essence
a pinch of salt 


Directions

  1. Preheat the oven to 180 degrees Celsius. 
  2. In a bowl, beat butter and sugar well. Then add the egg and vanilla essence and beat well again.
  3. Then sift in flour, salt and baking powder together in to the mixture. Knead well to form a dough.
  4. Make lime sized balls and dip it half in water and then coat with sugar. 
  5. Press the dough ball gently to make them slightly flatten when you coat the sugar.  
  6. Place them all in a lined baking tray. (leave gaps as the cookies will expand while baking)
  7. Bake the cookies for 20-30 minutes. Enjoy!
