Coconut and Jam Sponge cake
This is probably one of my favorites of cakes. Coconut and Jam combination is a lovely combination. This cake can be made with minimum ingredients and is very easy to make. If you like to have a piece of cake without any frosting then you would love this cake.
Ingredients
250g all purpose flour
225g salted butter
225g white sugar
2 tsp baking powder
4 medium sized eggs
1 tsp vanilla essence
200g strawberry Jam
25g desiccated coconut
Directions
- Preheat the oven to 180 degrees Celsius.
- Grease a 11 x 7 inches pan and line with baking paper.
- Beat butter and sugar together and add one egg at a time and beat well.
- Then add the vanilla along with the flour, vanilla and baking powder. Beat in low speed until everything incorporated. (this should take 2 minutes)
- Pour the batter to the lined baking tray and bake for 25-30 minutes or until the cake is done. Let it cool slightly.
- Meanwhile melt the strawberry jam using a microwave or stove. Pour it on top of the cake when the cake is hot.
- Sprinkle desiccated coconut on top of the Jam. Let the cake cool completely before slicing.
- Slice and serve! Enjoy! Store in the refrigerator.
