Roti Jala/ Net Crepes

May 13, 2020
Roti Jala literally meaning "Net Bread", is a popular Malay tea time snack served with curry dishes which can be found in Indonesia, Malaysia and Singapore. I really love to make these tender net crepes for breakfast or dinner. They are so tender and delicious as it absorbs all the flavour in the curry in to it when you dip them.

Ingredients

3 cup all purpose flour
1/4 tsp turmeric powder
1 tsp salt
1 egg
2 cups of water
1 cup evaporated milk/ thick coconut milk
2 1/2 tablespoon vegetable oil
A bunch of pandan leaves (rampe leaves to sprinkle oil, optional)
1/4 cup ghee or oil to sprinkle
Roti jala bottle ( use any plastic bottle, puncture three small holes on the lid.)

Directions

  1. In a bowl add all the wet ingredients and whisk slightly to incorporate.
  2. Then add all the dry ingredients together and whisk well. Then pour the batter into a blender and blend well until no lumps. Strain the batter using a large strainer.
  3. Pour the batter to the Roti Jala bottle until half full.
  4. Heat a nonstick pan in medium heat and brush a little oil using Pandan (Rampe) leaves. (I used a tissue paper as I can't find Pandan leaves here)
  5. Move the bottle in a circular pattern over the pan to form a lacy pattern.Cook until set. This will take 2 minutes.
  6. Once cooked, slide the crepe on to a plate and fold both sides and roll tightly to form a neat shape. (I like to put double crepes wrapped on to a roll)
  7. Serve hot with chicken curry! Enjoy!
