Buttermilk pancakes

Everybody loves pancakes! Whether you're making this pancake recipe for brunch, or to celebrate Pancake Day, these buttermilk pancakes will be everybody's favorite. Pancakes are the hero of a breakfast table and they are so delicious with some syrup and berries. These buttermilk pancakes are rich, fluffy and delicious with golden and crisp edges. These remain fresh and fluffy for a long time after cooking. 






(makes 8 pancakes each 5-6 inches)

Ingredients

2 cups all purpose flour
1 1/2 tsp baking powder 
1/2 tsp baking soda
1/2 tsp salt
2 tbsp white sugar
2 cups buttermilk 
2 large eggs slightly beaten
1 tsp vanilla essence 
Butter for greasing

Directions


  1. Whisk together the dry ingredients in a large mixing bowl. 
  2. Then add the slightly beaten eggs and buttermilk. Mix until everything is incorporated. (Do not beat, it's okay to have some lumps)
  3. Let the pancake batter rest for 10 minutes.
  4. Meanwhile, heat a large skillet over medium heat.
  5. Apply a little butter on the skillet. (Butter gives a nice colour)
  6. Pour 1/2 cup of pancake batter to it. 
  7. When bubbles start to appear on the surface with holes, flip the pancakes. 
  8. Continue cooking until golden brown in colour. 
  9. Serve with maple syrup or any other syrup you like with berries. Enjoy!
