Banana Bread
Ingredients
3 large overipe banana
1/3 cup melted butter (75g)
3/4 cup granulated white sugar (150g)
1 egg
1 tsp vanilla
1 tsp baking powder
1/2 tsp baking soda
A pinch of salt
1 1/2 cup all purpose flour (200g)
1/4 cup buttermilk (fresh milk works too)
Directions
- Preheat the oven to 170 degrees Celsius.
- Line a loaf pan with baking paper.
- Mash the banana with a fork and add the melted butter, sugar and mix well with a fork.
- Whisk the egg slightly and add it to the banana mixture.
- Sift in flour, baking powder, vanilla and baking soda. Fold with a spatula to mix everything.
- Now pour the batter to the loaf pan and garnish with walnuts.
- Bake the banana bread for 1 hour or until the bread becomes brown in colour on top.
- Insert a clean toothpick to see if the banana bread is ready. If it comes out clean it's done.
Notes: Store in room temperature in an airtight container up to 2 days. This can be refrigerated up to 5 days.
