Raspberry Sweet Rolls

These Raspberry Sweet Rolls are a twist on the cinnamon rolls! Perfect for breakfast, brunch or a high tea party. These Raspberry Sweet Rolls have a thick, soft and fluffy dough with a layer of frozen raspberries and rich Cream Cheese frosting. They are delicious indeed. 



Ingredients

For the dough

4 1/2 cup all purpose flour (500g approx.)

2 tbsp instant yeast

2 tbsp of vegetable oil

2 tbsp of melted butter

1/2 cup of white sugar (100g)

1 cup of warm milk

1 eggs, slightly beaten

1/2 tsp of salt

1 tsp vanilla essence 


For the filling

1 cup of frozen raspberries

1/2 cup softened butter (60g)

1 tbsp cornflour 

1/2 cup light brown sugar (100g)

1/4 cup white sugar (100g) 


For the frosting

100g cream cheese (4 oz)

1/4 cup butter at room temperature (60g)

1/2 cup of icing sugar (50g)

1/2 tsp vanilla essence




Directions 

For the dough

  1. In a bowl, combine warm milk, yeast, melted butter, vegetable oil, eggs, sugar, vanilla and salt. 
  2. Now add in the flour in two additions while mixing with a spoon. Once everything is combined, knead well to form a very soft dough. (It will be quite sticky in the begining, but once you knead it wont stick. The dough should leave the mixing bowl.)
  3. Apply some oil on the dough ball and cover and let it rise for at least 2 hours or until it doubles in size. (Proofing time may vary depending on the climate)
  4. After the dough has doubled in size, give a good punch and roll the dough on to a slightly floured surface. Roll to form a rectangular shape. 
  5. In a small bowl, mix frozen raspberries, white sugar, brown sugar and cornflour together and set aside. 
  6. Apply melted butter on the rectangle. Make sure to apply everywhere evenly. Now spread the frozen raspberry mixture on the melted butter. 
  7. Now roll up the dough into one long roll. Cut rolls, using a piece of thread, about two inches thick. Place rolls into a greased 9X13 baking pan.
  8. Place rolls in a warm spot and cover with a towel. Let rolls rise until double in bulk, about an hour. Bake rolls at 180 degrees Celcius for 25-32 minutes or until golden brown on top. 
  9. Once baked, remove the pan from oven and let cool on a wire rack.
  10. While the rolls are cooling, make the frosting. In a medium bowl, combine cream cheese, butter, icing sugar and vanilla essence. Using electric mixer, beat until smooth. Spread frosting on rolls and serve. Enjoy!
