Ingredients
4 1/2 cup all purpose flour (500g approx.)
2 tbsp instant yeast
2 tbsp of vegetable oil
2 tbsp of melted butter
1/2 cup of white sugar (100g)
1 cup of warm milk
1 eggs, slightly beaten
1/2 tsp of salt
1 tsp vanilla essence
For the filling
1 cup of frozen raspberries
1/2 cup softened butter (60g)
1 tbsp cornflour
1/2 cup light brown sugar (100g)
1/4 cup white sugar (100g)
For the frosting
100g cream cheese (4 oz)
1/4 cup butter at room temperature (60g)
1/2 cup of icing sugar (50g)
1/2 tsp vanilla essence
Directions
- In a bowl, combine warm milk, yeast, melted butter, vegetable oil, eggs, sugar, vanilla and salt.
- Now add in the flour in two additions while mixing with a spoon. Once everything is combined, knead well to form a very soft dough. (It will be quite sticky in the begining, but once you knead it wont stick. The dough should leave the mixing bowl.)
- Apply some oil on the dough ball and cover and let it rise for at least 2 hours or until it doubles in size. (Proofing time may vary depending on the climate)
- After the dough has doubled in size, give a good punch and roll the dough on to a slightly floured surface. Roll to form a rectangular shape.
- In a small bowl, mix frozen raspberries, white sugar, brown sugar and cornflour together and set aside.
- Apply melted butter on the rectangle. Make sure to apply everywhere evenly. Now spread the frozen raspberry mixture on the melted butter.
- Now roll up the dough into one long roll. Cut rolls, using a piece of thread, about two inches thick. Place rolls into a greased 9X13 baking pan.
- Place rolls in a warm spot and cover with a towel. Let rolls rise until double in bulk, about an hour. Bake rolls at 180 degrees Celcius for 25-32 minutes or until golden brown on top.
- Once baked, remove the pan from oven and let cool on a wire rack.
- While the rolls are cooling, make the frosting. In a medium bowl, combine cream cheese, butter, icing sugar and vanilla essence. Using electric mixer, beat until smooth. Spread frosting on rolls and serve. Enjoy!
