(Makes 10)
Ingredients
300g chicken breast part (diced)
2 slices of bread
1 tbsp lemon juice
1 tbsp soya sauce
1/2 tsp salt
1 tsp crushed pepper powder
1 tsp red chili powder/ paprika powder
1 tsp ginger garlic paste
1 tsp chicken stock powder/ half of soup cube
2 cups panko breadcrumbs
2 eggs, beaten
1/2 cup all purpose flour
Oil for deep frying
Directions
- Cut off all the fat of the chicken breast and wash the chicken and pat dry with kitchen towels.
- Cut the chicken in to small cubes and place in a food processor or grinder.
- Add salt, pepper, red chilli powder/paprika powder, lemon juice, soya sauce, ginger garlic paste, stock powder.
- Pulse everything together for couple of minutes, scraping the sides in two intervals. Grind or process until the meat is thoroughly minced.
- Then add the bread pieces. Process again until everything is mixed well!
- Now oil your hands or use a pair of disposable gloves. Knead the chicken mixture for a minute. Divide the mixture in to 10 equal balls.
- Then shape each ball to a popsicle and insert a popsicles stick. Repeat the same with the rest of chicken mixture. Freeze the prepared chicken popsicles for 30 minutes before coating.
- Now take them out of the freezer and coat first with all purpose flour, next beaten eggs and finally with panko breadcrumbs.
- Coat all the chicken popsicles and refrigerate for at least 30 minutes but preferably an hour. It can also be in a well-sealed dish overnight.
- Heat oil in a pan and when it’s hot, deep fry the chicken popsicles over medium heat. Turn heat to medium and fry 4-5 chicken popsicles at the same time. Do not overcrowd the pan. Cook for about 2-4 minutes on each side. I like turning mine a few more times until it gets a beautiful golden color.
- Take it out on the kitchen paper towels so the excess oil can be absorbed.
- Serve hot with your favourite sauce! Enjoy!
