Coffee Cake
If you are coffee lover, you are definietly going to love this coffee cake. This recipe will give a tender, buttery coffee cake. Frost this with a coffee buttercream and top it with a chocolate ganache or as you like for a rich flavour.
Ingredients
For the coffee cake
250g salted butter (softened)
225g sugar
5 eggs
225g flour
2 tsp baking powder
3 tsp vanilla essence
1/4 cup coffee milk (or 2 tbsp milk powder+1 tsp instant coffee powder+3 tbsp cold water)
For the Coffee Buttercream
100g salted butter (softened)
1/4 tsp vanilla powder
1 tbsp instant coffee (dissolved in 2 tbsp hot water)
1 tbsp condensed milk/heavy cream (optional)
300g confectioners sugar / icing sugar
Directions
- Preheat your oven to 150 degrees Celsius for 10 minutes.
- Sift flour+baking powder together twice.
- Beat butter and sugar well until creamy.
- Add one egg at a time and beat well until creamy.
- Then add the flour and fold with a spatula until combined.( Do not whisk)
- Finally add the vanilla extract and instant coffee to the milk and mix it with the cake batter. Mix well with a spatula until combined. (do not whisk )
- Pour the batter to a lined baking pan and bake for 1 hour under 150 degree Celsius.
- Once the cake is baked well, transfer the cake to a cooling rack and let it cool completely.
- To make the coffee buttercream frosting, whisk all the ingredients together and frost the cake. Garnish with roasted nuts or nouguts. Enjoy!
