Ingredients
- 140g dark cooking chocolate
- 115g flour
- 15g cocoa powder
- 100 unsalted butter
- 2 eggs
- 190g white sugar
- 1 tsp vanilla extract
- 1/4 tsp salt (or a pinch)
- 30g chocolate chips/chunks
Instructions
- Begin by preheating your oven to 180°C (350°F). Prepare a baking pan by greasing it with butter and line it with baking paper. (Square pan size 20cm x 20cm)
- In a heatproof bowl, melt the dark chocolate and unsalted butter together. You can do this by placing the bowl over a pot of simmering water (double boiler method) or by using short bursts in the microwave, stirring frequently until smooth and well combined. Set aside to cool slightly.
- While the chocolate mixture is cooling, sift together the flour, cocoa powder, and salt in a separate bowl. This helps to aerate the dry ingredients and remove any lumps for a smoother batter.
- In a large mixing bowl, beat the eggs and sugar together until pale and fluffy. This usually takes about 3-4 minutes with an electric mixer on medium speed.
- Gradually pour the melted chocolate and butter mixture into the beaten eggs and sugar, stirring constantly until well incorporated. Be sure the chocolate mixture is not too hot to prevent scrambling the eggs.
- Add the vanilla extract to the batter and mix until combined.
- Gently fold in the sifted dry ingredients (flour, cocoa powder, and salt) into the wet mixture until just combined. Be careful not to overmix, as this can result in dense brownies.
- Finally, fold in the chocolate chips until evenly distributed throughout the batter, adding extra texture and flavour to your brownies.
- Pour the batter into the prepared baking pan, spreading it out evenly with a spatula.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached. Be careful not to over bake, as this can result in dry brownies.
- Once baked, remove the brownies from the oven and allow them to cool completely in the pan for at least 1 hour on a wire rack before cutting into squares and serving.
